Weddings at W Hong Kong are anything but ordinary and this year, we’re pulling out all the stops to create an incredible wedding feast that pushes the boundaries with bold, new flavors and unexpected reworking of traditional Chinese dishes.

W Hong Kong has teamed up with the hottest up-and-coming chef, James Sharman (previously of Denmark’s Noma and protégée of Tom Aikens), of One Star House party to create an exclusive modern FUEL wedding menu.

As the co-founder and head chef of One Star House Party, James’ locally-sourced and innovative approach to cooking was the perfect match for W Hong Kong’s FUEL philosophy. His “Wed Like a Celeb” menu for W Hong Kong is inspired by the city’s local produce, frenetic energy and unique blend of cultures and traditions. It offers a more healthy and modern approach to a Chinese wedding banquet, allowing guests to indulge while still having the energy to go longer, stay later and still feel fabulous the morning after.

WED LIKE A CELEB MENU

James’ Wed Like A Celeb Menu is a healthier alternative to traditional Chinese banquets and does not compromise on any of the indulgence! Each dish is designed to surprise, delight and interact with each guest in a very personal way.

Highlights include the traditional pork belly served with pickled radish and char siu-pickled wolfberries (a powerful antioxidant that can also strengthen your immune system) which not only offsets the fattiness of the pork but also refreshes your palate, a clean and sophisticated take on pan-seared scallops with broccoli puree and crispy lotus root, a light low-cal dish with plenty of flavor, Vitamin C and fiber, which helps to promote healthy digestion, and a deliciously light goose web terrine with red cabbage.

The handmade Hawthorn mochi with sweet red bean cream and smoked salted chocolate served family style is a perfect example of the thought and meaning that has gone into each dish—it’s also made completely without sugar.
