Chef Lee particularly selects those that weigh over 7 kg, of which the fish meat is most delicate. Among all, “Sauteed Fillet Of Giant Garoupa Rolls” is a must-try. Originally a Chinese traditional dish made with freshwater fish Perch, Chef Lee pushes the limits by replacing it with Giant Garoupa. Wrapped in Yunnan ham and celery, this combination produces an exceptionally rich flavor, which when fried provides perfect textural balance, creating a refreshing sensation for the taste buds.
